Favorite Spice/Seasoning
Mine is defintely garlic. If possible, I like to chop it up and cook it a little olive oil before adding it to whatever I am making.
Others I use/like a lot are oregano, basil, rosemary, and probably cumin now that I know that is what it is called. Let's here yours, hopefully I will pick up some good ideas to try. |

Sea salt as opposed to regular iodized salt. Makes all the difference in the world.

After that, cayenne and cumin are good but i cook lots of spicy food. |

Szechuan peppercorns, not only because they're good, but because they're so different from anything I had ever experienced before.

Garlic is awesome. Please try not to use the powdered kind. Powdered is usually soo weak, you can't taste it or need lots of it.
Cumin, cayenne, oregano go into great chili. I love cilantro in guacamole and salsa. Rosemary is good on lamb and potatoes. But I put black pepper on everything. And thus, my favorite spice. |

What;s the best way to use garlic? Buy the raw garlic and chop it with a knike, or using on of those presses?

Garlic presses are worthless, and too hard to clean.
Chop it up using a knife and make little slices, or just dice it. or smash it with the side of the knife. |

Call me old school, I'm gonna go with pepper here. alot of other spices like paprika or cumin really add a lot to some dishes, but it all starts with mother [censored] black pepper. In the middle ages entire trade routes were laid out around pepper. pepper is the [censored].

Black pepper or white pepper. Love it, and lots of it too. Although garlic comes to mind first when I think of delicious and savory, I put pepper on things much more often than garlic, several times over if not more. Garlic is great, though. You almost can't have too much of it. You can definitely have too much pepper. Though for me, that also requires a LOT. I also like thyme a lot. It makes things nicely aromatic. Really great baked in a closed cast iron pot with chicken so the taste really permeates the meat. Takes chicken to a whole other level. Also I like rosemary quite a bit, and again it's great on chicken. Actually, if I had to pick my favorite ways to season and spice stuff, it would be with butter, pepper, lemon, and garlic. Alone or in whatever combo. |
