Easy Cooking Recipes

I found a post alluding to another thread of easy recipies, but could not find the exact thread. Anyone have it? Or just add your own easy recipes you like to cook for yourself.

BURRITO!!!

Assumption: you've eaten one and you liked it.

In the bread section, usually, you'll find tortillas. They come in corn or flour versions. They also come in different sizes. Grab a package.

You've got eggs? If not, head for the dairy section. Pick up a dozen.

You like bacon or sausage? (I prefer chorizo and bacon.) Make a decision.

How about potatoes? Pick up a package of frozen hash browns. Or O'Briens.

Salsa is absolutely required. Chunky, runny, cilantro... the list goes on and on.

Some like diced onions and/or green peppers.

Slice, dice, mix, fry, scramble, etc., all the stuff you want inside the thing.

Put a tortilla between two moist paper towels. Nuke for 10-15 seconds.

Fill to your heart's content, roll 'em up, grab a cerveza and caramba! Muy bueno!

That's supposed to be easy? About the most difficult thing I cook is my favorite spaghetti recipe: Boil spaghetti 9-11 minutes, add sauce from a jar, enjoy. Sometimes I'll cook up some ground beef to add to the sauce if I really feel like going all out.

If you don't feel like dirtying up dishes, then here's an option that I'm sure most of you haven't tried...

2 eggs
precooked sausage
English muffin
cheese
paper bowl
paper towel

Crack open 2 eggs into a paper bowl, stir it up.

place 2 sausage patties on a paper towel

place the eggs and sausage in the microwave and set it for 2:30. (poke some holes in the egg after 2 mins)

While that is cooking, put the english muffins in the toaster.

DING, put the egg and sausage on the muffin, add cheese... munch away

no dirty dishes either

Here's one I whipped up just last night.

2 lbs. cubed pork loin
1 onion, coarsely chopped
2 14.5 oz cans diced tomatoes (undrained)
1 cup raisins
1 tsp oregano
1 tsp cinnamon

Brown the pork in olive oil. Add the onion and cook it down a bit. Drain the accumulated fat and oil. Add the rest of the ingredients and simmer for 20 min. Serve over rice. It's pretty easy, and it's a tasty dish that is a little out of the ordinary with the cinnamon in there.

I like your style.

Got any more gems like this one? (which I will be trying)

I forgot to mention this... I don't think it would be a good idea to put the pre-cooked sausage in the microwave for the entire time. Just get it hot and take it out.

you can obviously do this better with a skillet and uncooked sausage, this is just an easy way to do it
