I don't know if I'm getting paranoid because this happened about a million times recently, but I'm worried I'm paying off too much. Do you ever fold these types of hands? One's a straight up raise, one's a checkraise, and one's a bet/3-bet.

since you haven't given any reads, I have a hard time giving that guy credit for KJ, but I really don't know if capping is the right thing or not

First two are easy calls, second one I cap or call based on my read.

Folding either of those would be bad IMO. I call all of them, third one I like a cap although it is probably close. Is there really 50%+ chance he held KJ/AA/QQ/TT in the BB and played it like that? I dont think so.

No folding.

Your hands in all cases are way better than the opponent has any right to put you on so there's a really good chance he's raising with less than you have.

There are players I'd cap the 3rd one against. This guy was very passive and kept pausing on each street, which he doesn't usually do. At first I figured a hand like QJ or JT. I was pretty sure I was toast after the river 3-bet. His aggression factor was aroud 0.6 or something.
