There are already quite a few organizations attempting to form a union (IPA, IPF, USPA, among others). And don't forget the failure that was the WPPA. The biggest problem is many of the pros look out for themselves and others are willing to jump into a situation (ie. Poker Superstars II). Also the large number of "amateur" players that are in the larger events wouldn't be represented, causing more possible conflicts.
