Default What are the odds of flopping...

2 pair with xx? Straight with T8o?

Is there a chart that covers this for all hands? or a program?

2 pair and only two pair:

[C(3,1) * C(3,1) * C(44, 1)]/C(50,3) = 396/19600 = 2.02%

Straight:

[3 * (4 * 4 * 4)]/C(50,3) = 192/19600 = ~.98%

To figure out the majority of this type of stuff, you'll need basic combinatorics. If you search for combinations and/or permutations on google, you should find a bunch of info.

Probability covers the concepts needed, although a lot of it has nothing to do with poker. Worthwhile read either way.
