Default an \"average\" hand

When computing say K8s vs. 2 average hands, how do you determine what an average hand is? We all know that A8 or 88 is a favorite against 2 random hands, but how do you mathematically know this?

People have written computer programs to run them against every possible 2 card combination (i.e. a random hand) and recorded the results.
