Default All-ins data

Hello

I'm playing MTT and I'm recording my all-ins
But I got a question about a particular situation
First when you are all-in against a single player, its not hard to know the real percentage of your hand.
But how to know it when the play goes on and you are already all-in
For instance, you raise all-in and three players call. On the flop a player goes all-in, another one call and the third one fold. So on the flop, we see the cards from three players, but not from the fourth who folded.
Do I have to consider these situations as "non-all-in" or what ?
I'm just a little paranoid (yes just a little... ) ) and I like to know my difference percentage between real/theoric. and its also a way to check by myself that poker online is not rigged
So do I have to count these all-ins or not ?

Sorry for my english -> not my native language
