If you don't mind going a few miles off Strip, check out Makino. It's a sushi-themed buffet, and unlike many other such buffets (i.e. Todai), the sushi is actually very good. And you can sometimes get raw shucked oysters too. It's like $25 or so, and worth about twice that (at least for what I eat [img]/images/graemlins/grin.gif[/img].)
