it's the number of combinations of each hand.
For example, the AJ x 12 means 3 more Aces and 4 Jacks give 12 combinations of AJ.
for the QQ x 3, there are 3 queens left, so 3 combinations.

The dealers seem somewhat better at Harrah's, although the Trump ones are showing noticable improvement for the worst ones.
If you're into lower limites, Trump spreads a $3-6, Harrahs does not.

my initial "feel" was 10-15%. After thinking for awhile, I feel the number is 10%, possibly lower, for his bluffing % to make folding correct in big pots. Of course my thinking involved math....
