Could someone please explain how standard deviation applies to poker? I understand the mean of a mean concept and how to use this in other disciplines, but I am unaware of its use in poker.

View it as a measurement of how much short term luck there is. It will help you understand the swings that you go through and it can help you to figure out how large a bankroll you need to assure survival.
