On the turn/river is there any reason I shouldn't cap it? Can I really put him on 10-q?

No, not unless you know the other player to be extremely solid/tight.

When I got raised on the river, I might have given him credit for QT. You certainly played your hand consistantly with having AA, and he seems to be ignoring you, so I am starting to believe that he doesn't card if I have AA.

Only if you know he makes terrible preflop calls then goes aggro with draws could you even consider QT. Cap turn and river every time.
