I've started playing a lot of single table tournaments and would like to calculate my SD and bankroll requirement.

Will I get a valid result if, using the formula Mason gives in Gambling Theory and Other Topics (and in his "Computing Your Standard Deviaiton" essay on this site), I calculate SD on a per tournament basis instead of per hour by entering "1" for for the lengh of each session and the net win or loss of each tournament for the result? I am of course only entering results from the same size tournament into the formula.

I can't think of a reason why this isn't valid, I figured it can't hurt to check with the experts though.

As long as you have a big enough sample size, it should be OK. If I remember correctly, there is a theorem called central-limit theorem which states that the distribution of the averages of a population which is not normally distributed, will approach a normal distribution if the sample size is large enough.
