Blind structure

A friend of mine is having a NLHE tournament this weekend and has asked me to help with the blind structure. With the following components in mind (35 to 40 players, each player starting with $500 in chips, a preferred duration of 5 to 5 1/2 hours with a 10 to 15 minute break every hour) I would appreciate any input. My main concern is that the blinds are not too big in the end, so that the final two players are not short stacked.
