Could someone explain in newbie terms the difference between a, say 5 - 10 game versus a 1 - 4 - 4 - 8 game.
A 5-10 game has structured betting while the 1-4-8-8 game is a spread limit game.
In the 5-10 the blinds are usually $5 for the big blind and $2 or $2.50 for the small blind. Players can bet or raise in $5 increments pre-flop and on the flop then the betting increases to increments of $10 on the turn and river.
In spread limit games like the 1-4-8-8 you mention the blinds are usually $2 and $1 for Big and Small blinds respectively and players can bet any amount between $1-4 pre-flop and on the flop and then can bet any amount $1-8 on the turn and river.

Sorry, I'm a little slow and need some more detail. So UTG to limp preflop you would have to put in $2 and to raise you could put in $3 or $4. Is that correct? On the flop if someone bets $1 you could raise to $2, $3, $4 or $5? If someone bets $2 can it be raised to $3 or do raises have to be in the same increment as the original bet? What about on the turn, if the bet on the flop was $4 can someone bet the turn for $1? What about a 3-6-12 game, how does that work?

As far as I know a player can only re-raise in the same amount that the original bettor raised.
So, if you call for $2 then if I'm on the BB I can raise my option to say, $4. If you want to re-raise me you have to re-raise $4.
Same thing on the river. If I bet $8 you can't re-raise me $1. You'd have to call the $8 bet and re-raise $8.
3-6-12 not spread like 1-4-8-8, meaning it's a structured betting system - just think of it as playing 3-6 pre-flop, flop and turn but you can tag someone for a $12 bet only on the river.
There's no option to bet any amount between 3-6 or 6-12 - it's structured.
