This is because in a card room, hands are shuffled physically which means that if you held a good hand now, these cards won't be next to each other again for a while
I'll give you the benefit of the doubt that you genuinely don't understand online shuffling and real life shuffling.
If you have ever watched a live shuffle you will realise that they are not truely random, however online shuffling takes many precautions against this and shuffling is in a highly advanced state.

If you wish to discuss whether sites _deliberately_ rig their shuffle, then you will find many debates on that on this forum by using the search.
However I don't think that even the most die-hard kook actually believes that sites can't provide a random shuffle if they so desire.

I guess what I am trying to say is that physical shuffling really ISN'T totally random like a random number generator is in online games.
Okay, having re-read your post, you do understand the difference, the shuffle your dealer uses is very important live.
