what kind of scenarios provide double gutshot staight draws, like what hole cards do you need and what kind of flop, in general.

The standard scenario is having a connecting hand like T9 and a flop like Q86.

Any connecting hand and any 1-3+5 gapper:

T9 flop: Q86
T8 flop: Q96
T6 flop: Q98
Q8 flop: T96
Q6 flop: T98
