I am going to give the 6 max tables a try at the 5-10 level. What differences should I expect when playing 6 handed? Also what strategical differences are critical for 6 max tables? It would seem that a hand such as KJoff or AToff would move up in value whereas a hand such as 98s would move down. Is this correct thinking? Any help is greatly appreciated.

And I wouldnt start at 5/10 short. Start lower, 1/2 or 3/6

As Nate Tha' Great says: shoot from the HIP in 6max:

High card power - big unsuited cards go up in value with less players in the pot
Initiative - enter the pot with a raise most times, unless you are overlimping a drawing hand to create a family pot
Position - position is critical because so many SH hands are marginal, 1 pair hands that are difficult to play and being in position helps greatly.

Check out the sticky at the top of the thread, and dig through the archives, too...everything you could want to know is there.

Also, I'd recommend starting at 1/2 or 3/6 to get your feet wet if you are unfamiliar with 6max. If you have trouble, consider getting a coach.
