I think you played both hands fine.
Hand 1: You have aces up, so you can show the hand down. You will only be called if you are beat. You may get someone with a better ace to fold, but I would wait and bluff with nothing on another hand.

Hand 2: I usually prefer playing my sets on the flop. There is nothing wrong with waiting until the turn, but when you can raise the flop and go all in on the turn the hand plays itself.
