Steak does not taste good if there is no fat. To hell with the health fanatics. Ideally, I like the fat to be well-done but the meat medium (pink in color). Yum yum.

Agreed. I've discovered that every butcher outside of the state of Texas has no idea about trimming a brisket either. They all cut all the fat off.

i agree it adds to taste, but its un eatable, and am mad when 6 ounce of my 2 ounce steak are fat that i just cut off.

Agreed. I've discovered that every butcher outside of the state of Texas has no idea about trimming a brisket either. They all cut all the fat off.

Hmmm that may have been what went wrong, when I tried my hand at it. I had it smoking for 7 or 8 hours, but it was still tough....

Fat is disgusting, both the taste and the texture.

It has already lent its taste to the meat while cooking; no reason to eat it directly.

horrible....ribeyes are the best steak....NY Strips and T-bones....filet mignon is what women eat.

Just cut the fat off the ribeye after cooking...the meat on them is spectacular.

Remember there is a big difference between fat on the inside and fat on the outside. The more fat on the inside = more flavor and tender. Hence – Fat content Prime>Choice>Select

LOL I couldn't agree more...why pay $2 more per lb for filet when it tastes worse than ribeye.

P.S. if you have a store that sells PRIME beef and not the crap that normal grocery stores sell buy that instead of filet and prepare to be blown away and how bad filet is, and how good ribeye/NY strip is.

Not smoked long enough.
Trim brisket? Not on your life.
Try smoking with the fat side down. seems counter-intuitive, but it works great. The fat acts like a bowl and keeps the juice from dripping out.
