So lately I find myself craving beans.....any kind of beans....kidney, pinto, black,.....even......*gasp* navy.

problem is, I have no bean recipies... do any of you know of any tasty bean dishes?

Here's a couple:

Refried Beans
4 Cups pinto beans -- cooked & mashed
12 Ounces evaporated milk
2 Tablespoons shortening -- melted
1/2 Pound cheddar cheese -- shredded
Salsa De Chile Colorado
Mash beans in skillet and add hot oil. Mix well. Stir in evaporated miklk. Cook over very low heat, stirring frequently.
Before serving, refry beans by adding 2 tablespoons smoking hot fat, shredded cheese to taste and some Salsa and stir briskly over high heat.

Baked beans
2 smoked sausages, halved and cut into small pieces
3 cups rib trim, smoked and baked with BBQ sauce
4 14 oz. cans beans
1 16 oz. can white kidney beans
1 cup celery
2 cups chopped onion
2 cups chopped green pepper
1 cup sliced mushroom
4 cloves garlic minced
1/4 cup molasses
1 bottle of beer
1 tbsp rub
1/4 cup BBQ sauce
1/4 cup BBQ sauce

- Chop vegies (celery, green pepper onion, mushroom and garlic) saute on low heat till tender, about 20 minutes.
- Meanwhile place smoked rib trim in pie plate with 1/4 cup BBQ sauce and 1/2 bottle of beer and bake uncovered at 275 for 45 minutes, turning occasionally. Meat should look almost blackened when done. Allow too cool for 10 minutes and pull with a fork into shreads, reserve with pan drippings.
- In a large pot or non stick frypan add all beans, veggies, sausage and rib trim, pan drippings together with beer, rub, molasses and 1/4 cup BBQ sauce and simmer for 1/2 hour.

This recipe can be used for black or red beans.

What Youll Need
1 Onion
1 Bunch, Cilantro
4 Garlic Cloves
2 Cans of Beans
1 slab of Back Bacon
4 Jalapenos/Habaneros or whatever hot pepper you prefer
1 Bay leaf
Extra Virgin Olive Oil
Red Wine Vinegar
Salt and Pepper
2 Packets of Goya Seasoning (I like the "Azafran")

Directions:
Chop one onion fine
Chop a bunch of cilantro fine
Chop several garlic cloves
Chop hot peppers
Dice the back Bacon

Get a stew pot, place the olive oil and the diced bacon inside and heat on a medium-low flame. When the bacon is browned, put the onions, garlic, and hot peppers inside. Once that is browned, pour in the 2 cans of beans WITH the water.

Then mix in a capful of vinegar, the packets of seasoning, the bay leaf, the cilantro and some salt and pepper. If the ensuing stew looks too viscous, add about a 1/4 cup of water. Set the stove to simmer, and allow the water to boil off slowly. Check to make sure it doesnt burn off too fast and burn on the bottom. The longer you cook the better itll be, so feel free to add more water to the mix and repeat the boil down if youre not too hungry yet.

If you feel adventurous add some grated cheddar or fontina cheese (danish fontina)on top at the end when you plate it.

You're on the internet of course, so finding some interesting bean uses can be found easily. Signal:Noise ratio might suck, so maybe go to FOODTV or some "bean council" or the S&W Foods website or something like that where they make recipes to help them sell beans.

Something quick to cook:
-Cut off a portion of smoked sausage / polska kielbasa
-Cut sausage into bite-size chunks and cook in frying pan
-Grab a can of red or pinto beans
-Empty beans into bowl and microwave until hot.
-Combine cooked meat, a fair amount of the grease, and meal-sized portion of beans in a bowl for yourself.
-Add tabasco or other New Orleans style hot sauce (don't use mexican type hot sauce)
-Stir it all together. Enjoy.

If you have time, energy, or the desire to make the beans better nutritionally, add some white rice.

For a major improvement to canned beans, take a standard can of pork and beans, add about 1/4 cup of catsup and some diced onions (1/2 to 1 whole onion according to taste) and bake in a covered baking dish at 350 degrees for 1/2 hour.

White Rice is nutritionally void, so this suggestion makes no sense. Try Brown, or Basmati rice or something like Quinoa for nurtition but not white rice.

Chop one white onion, 1-3 stalks of celery, and 1 bell pepper, then saute in olive oil until the onion is translucent.

To one pound of dried red beans that have been soaked overnight, add 8-10 cups of chicken stock or a combination of chicken stock and water.

Add one smoked ham hock or 1-2 pounds of smoked ham and about 1/2 lb of smoked sausage. Another option is to brown the sausage at the beginning and saute the vegetables in the sausage grease.

Add two bay leaves, about a teaspoon of salt and half a teaspoon of cayenne, and 2-3 cloves of minced garlic. Cook until cooked and creamy, about 2 hours. Season.

This is a myth.

White rice is brown rice with the bran removed. Brown rice is higher in fiber, but white rice is almost always (at least in most developed countries) enriched with other nutrients like iron, niacin, thiamin, etc. So white rice has significant nutritional value, especially if you don't rinse before cooking.

That said, brown rice is a better option if the taste isn't a problem.

If you are talking about the bag of uncooked beans and add salt and half an onion to the recipe and cook it for about 10 hours it will. Then add cornbread more salt some onions and some relish if you're into stuff that isn't good. Be sure to eat with boiled eggs and collard greens with lots of vinegar.

Or buy the uncooked 15 bean soup mix add in some cooked sausage and alittle bacon some onion, salt, pepper, alittle cayenne, and ground cumin and boil for as long as possible you have another great meal.
