Would you fold ATs from the bb here if you knew nothing about the raiser?

Now, what would you do if you had noted that the villain had been raising frequently in the last 10 hands or so, and had noted "limped 1/4 his stack lvl5 5-handed with K7s on btn (while short)"?

If you fold no matter your read, what min. hand would you want to make calling correct here?

I'm no expert, but I'd probably fold here. You have the chip lead, and he's one of the few players at this table that can really hurt you. AK, AQ, or even AJ has you dominated.

I'd probably call with AK or pocket Q's or better. Maybe my standards here are too high, but you're under no real pressure to double up at this point.
