I cap preflop and cap the flop.

Then I'm leading the turn and slowing down to a raise.

Cap the flop or checkraise the turn, either is acceptable. You have way too much equity to be scared of the flopped strait. W/all that paint on the board, people get aggressive w/a pair+oesd or 2 pair. Don't slow down that early in the hand

I like checkraising the turn much more. Your set is vulnerable with this board so you want to see the turn card without escalating the pot any more.
The turn card is harmless, you should not fear a straight that much (yet) so you must raise here.
I also want to point out that you never should check the turn here if you are not 100% sure someone will bet. Getting this checked through would be a major desaster! Seems unlikely though even with just the numbers so I like it.

I think you slowed down too soon. I'd checkraise the turn to trap the callers in between and call down if 3bet, though capping the flop is ok too.

I just fast play the flop by capping and keep betting unless MP raises the turn, in which case I slow down as AK is very likely.

you've got a ton of equity on the flop regardless of the turn card. i'd jam it there and lead the turn.
