This is a classic because the symbols change after every click on the crystal ball, making it harder for average joes to figure it out because they don't see the same symbol over and over.

When you choose a two digit number, let's call it xy and then you subtract the sum from the number, so x*10 + y - (x+y), you end up with x*10-x = 9*x. So you always end up with a multiple of 9 (ie. 0, 9, 18, ...). If you look at the symbol for all of those numbers, they're all the same and that's what it will show you.
