Why are we taking a card off on the flop with only a GS getting 6:1 HU?

7:1. Microposter may be giving himself some pair outs as well.

I usually bet this flop, especially if I plan on calling. Anyone else agree?

Disagree. I think you get raised too often.

I peeled here for a couple reasons.

1) Yeah, I'm only getting 7:1, but with implied odds I might be able to make it up.

2) I may get a free card. If the raiser doesn't have an A, he will sometimes check the turn.

3) I don't want to appear to give up easily on the flop. This may be a questionable reason....

I think the peel is fine, you often have as many as 10 outs here. And you don't want players to think you'll fold to a flop bet every time an ace flops.
