Some rules state that when chips are "colored up" to remove the smaller denomination chips, the odd chips will be "Raced off". What is the procedure? How will they "Race off the chips? I've only been in one large multi-table tournament (charity) and they just wasted any odd chips when they colored up. How is it supposed to be done?

The odds chips are placed in front of each player. You are dealt one card for each chip that you have. High card(s) get the higher-denom chips that match the amount (by suits if necessary)

So, if you have 3 green, 2 green, 1 green, 2 green, then two blacks are given out and 8 cards are dealt. Typically you can only win one chip during the race-off.

Additional point about racing off chips:

Racing off is preferable to chipping up in large tourneys because the total chip count remains constant (what you do in a home tourney really doesn't matter). When some undetermined amount gets added to the total chip count by chipping up, it's harder to ensure that spurious chips weren't "added" at some point by unscrupulous players/dealers/TD's. I always make a point of knowing what the total chips in play is near the end of the tourney.
