Ok, as far as I understand a 'sticky' is a bonus that you can earn but never withdraw. Why would I want to risk real money to earn casino money to play -EV games?
What am I misunderstanding?

Here is a simplified example. Say you have a $100 deposit - $200 bonus sticky bonus, with a $2000 wager requirement.
Deposit $100, you now have $300 to play with. Bet $300 on the closest to 50% bet you can find. You now either have $0, or $600. If you win and have $600, you play off the rest of your WR and end up with around $590, $390 of which you can withdraw.
So you either lose $100, or win $290, based (primarily) on the outcome of a 50/50 wager.
This is simplified, and there are much better ways to play a sticky (see bonuswhores casino forum), but this gives you an idea why sticky bonuses can sometimes be very +EV.
edit: After re-reading your post, I think what you are missing is that you are given the sticky bonus to play with right away.
