I need a good recipe.

I want to use the following items:

Beans
Ground Beef
Peppers
Onions

What sort of spices do I use?

I don't want it super hot or anything, I just want it somewhat hot and tasty.

I use a great little helper called "Shelby's chilli". It's sold in groceries in a small brown bag. It has the cumin and other spices that make chili easy. I like mine hot and I embellish in other ways. It is best to let it sit over night in the fridge before eating though.

bay leaves. a little cinnamon and sugar. salt and pepper. theres more too.

Here's kinda my recipe, but not exactly as I'm giving it from memory. I usually put in the following:

1 pound each of ground beef and stew beef (this is very key)
3 chopped tomatoes
1 large chopped onion
1 bottle beer (i use shiner bock)
a few peppers - serranos, chiles, jalepenos
1 tbsp worcestershire
1 tbsp chopped garlic
1/2 cup chili powder
1/4 cup comino (cumin)
1/4 cup paprika
2 tbsp oregano
1 tbsp cayenne
1 boullion cube
salt & pepper

I also sometimes add kidney beans (1 cup soaked overnight according to the directions on the bag), although I'm from Texas and i always feel a little shame doing it.

Throw it all in a crock pot and simmer overnight. Anyway, that's pretty close although I may have left out something.

Here's my recipe. Note that the level of heat can be controlled by the amount of cumin and cayenne used. As-written results in a more "tomato-ey" tasting chili with very mild heat...excellent on hotdogs.

Makes 12-16 servings
4 teaspoons oil
3 onions, chopped
3 green chilies, diced
6 oz. Guinness Extra Stout beer (or any "dark beer" will suffice)
2 lbs. lean (85%) ground beef
1 ½ lbs. beef sirloin, cubed
2 (14.5 oz) cans diced tomatoes
1 cup tomato sauce
4 (6 oz.) cans tomato paste
1 cup beef stock
½ cup brown sugar
5 tablespoons chili powder
2 tablespoons cumin
2 tablespoons cocoa powder
2 teaspoons oregano
2 teaspoons coriander
2 teaspoons salt
1 ½ teaspoons cayenne


Directions
1. Heat oil. Cook the onions, garlic, and meat until brown.
2. Add beer to deglaze pan, scraping up bits. Add diced tomatoes, tomato sauce, tomato paste, and beef broth. Stir.
3. Add spices, bring to a simmer over medium/low heat. Reduce heat, and cook, stirring every 15 minutes, for 2 to 3 hours. Refrigerate overnight to let flavors blend together. Scrape fat off top, and reheat on stove.

In addition to the ground beef, medium or hot italian sausage makes it frickin awesome, IMO.
I usually use 2-3 different meats.

Skyline Chili is cincinnati chili.. its not your average chili tho, a lot of out of towners don't care for it. i can't live without the stuff.

when the bengals were on monday night football, madden talked about how much he loved cincy's chili. in his video game you can adjust the price of how much your charge the fans for chili, kinda cool

Groceries around here carry something they call Chili Beef. It's probably the same as Jake's "stew beef". I use the Chili beef exclusively these days. It seems somewhere between ground beef and steak and seems to cook up really nice.

You poor young man. Everyone needs to know how to make a great chili.

1 pkg ground beef or ground veal (I prefer veal)
1 pkg beef shoulder (or other tough, fatty cut of meat). The problem with stewing beef is that it is often has a fair bit of sirloin in it, which tends to be too lean and consequently dry out while simmering.
1-2 hot italian sausages
1 bottle of dark beer
1 glass of red wine
2 shots of borboun (because everything needs bourbon)
1 can of peeled tomatoes
1/2 can tomato paste
1 can of mixed beans (or just kidney beans)
1 small can of corn
1 large onion
7-12 jalapenos
chili powder
cayenne pepper
cumin
black pepper
salt

That's my basic recipe, add spices, meat, and veggies as you like. Often I'll add some pepper extract to really fire it up, but not many people like that sort of thing. The spices are to taste, but you usually need lots of chili powder, less cayenne, and even less cumin. I usually do this in a crock pot; first brown the meat in a frying pan, then throw everything into the crock pot. Usually I'll reserve 1/2 the spices and 1/2 the veggies though and add them after after a couple hours so they still have some bite to them.

My friend works at a Wendy's. She told me the Chili is leftover hamburger meat.

it's nopt the same. chili beef is coarse ground. stew meat is larger chunks.

this is pretty well known. it's why they started selling chili at wendy's to begin with, just so as not to waste the old burder meat.

I'm not with Diplomat on the corn in the chili, but definitely recommend having more than one texture in the meat. I like to combine hamburger with pork roast. The extra chew goes really well in a savory dish like chili and provides variety bite to bite. Diplo puts sausage in the mix, too, and I guess that could be good too. Truth is, chili is pretty easy to make interesting with almost any kind of meat. I've had chicken and turkey chili, and they were great too.

1/4 cup olive oil
2 large onions, chopped
2 lb ground beef (shoulder or chuck)
2 lb ground pork
2 tablespoons salt
1/2 - 2/3 cup chili powder (start with 1/2 and add more to taste)
3 tablespoons ground cumin (from toasted seeds)
3 1/2 tablespoons dried oregano
2 tablespoons ground cinnamon
3 teaspoons cayenne pepper (I like it hot, but 2 teaspoons might be enough)
4 cups tomato juice
3 cups beef stock
8 medium garlic cloves, peeled and minced
2-3 tablespoons yellow cornmeal to thicken (more/less as needed)
32 oz dark red kidney beans

Brown the meat with 1/2 the oregano, cumin, and chili powder mixed in...throw it in the crock pot with everything else, slowly adding the rest of the spices every 1/2 hour or so until its to your liking...let it simmer all day.

I've also found a bottle of dark beer poured into the chili does wonders for the taste.

I also like to get almost all the liquid in the chili from a lot of onions and tomatoes cooking down. Onions practically disappear, so you just get a flavorful broth, not a feeling of "what the hell are all these onions in here for?"

2-3 lbs ground beef
1 of the large cans of tomato juice, I forget how many oz it is.
a decent amount of beans, pick your style
I prefer fresh onion on top of the bowl rather than cooked in
a full head of garlic, if not 2
a combo of 4 parts chili powder, 2 parts cumin 1 part paprika, 1 part cayenne powder, plus a pinch of flour.

brown the beef w/the garlic. get all the spices mixed together in a bowl, get enough to covered all the beef. drain the beef, get all the grease out, then dump all the spices on the beef and heat for like 1 min. add the beans and then the tomato juice, add chili powder on top for some color. cook until it starts bubbling.

This recipe is the real deal. Keep ground beef, beans, tomatoes and other crap away from your chili. Also, that junk they serve in Cincinnatti is not chili.

The only things that should be in chili are the following:

2 lbs Chuck roast - cubed and browned
4 cloves Garlic - chopped and fried in oil
4 Dried Chipotle Chilies - soaked then chopped - save water
4 Dried Ancho Chilies - soaked then chopped - save water
2 or 3 Jalepeno Chilies - seeded, chopped then fried in oil
1 tbl each cumin and oregano - toasted until fragrant

Dump above in a heavy bottomed pot and just cover with chili soaking water. Simmmer above for 2 hrs, add 1 tbl Masa Harina (corn flour-for thickness) simmer for one more hr. Add salt n peppa and hot sauce to taste. Chill overnite and reheat for best flavor.
