my favorite instrumental is probably 'oscillate wildly' by the smiths.

Stevie Ray Vaughn was the first name that sprang to mind, but I couldn't pick a song.

Cheech's guitar solo, I think it was in Cheech and Chong's Next Movie, was also great, but mostly because he was wearing a pink tutu at the time.

Almost anything by the Ventures - they do a great "Wipeout."

Besides some of the fantastic choices so far, I've got to toss in:

"Moby Dick" - Led Zeppelin, for the guitar riff as much as the drums.

and especially,

"Whammer Jammer" (live version) - J. Geils Band, for the sickest harmonica jam you've ever heard.

Also, "Focus" by Hocus Pocus kicks ass, but it has some yodeling, so I guess that rules it out of the instrumental category technically (although I would suggest that yodeling is a way of using the voice as an instrument without actual lyrics...).
