I'm hosting a 30-person tournament tonight and I was wondering what a good blind structure would be. I'd like to have each person to start with maybe $50 in chips and have the tourney end somewhere between 5-8 hours.

Give this a try, raise blinds every hour:

1: 1/2
2: 2/4
3: 3/6
4: 5/10
5: 10/20
6: 20/40
7: 40/80
8: 50/100

The 50/100 is probably the highest you will need, just double if it goes any longer. I originally did it out in half hour blind raises, but that makes for some funny blind stages that don't make much sense.

Also if you have the chips, you may want to consider raising the starting amount to $100, keep the same blind structure. With $50 you will probably find a lot of people in tight spots after just a hand or two. Good luck either way.
