UTG is loose and semi-aggressive.

Looking back on it with time to think, I believe the river bet wasn't that good. Not so much because I would have expected him to have 6s, but because an A also filled out the STR8 and I did not think of that at the time I made the bet. I was thinking more along the lines of him having a medium pair because I didn't think he'd be calling me with AK or something like that.

yeah bet fold looks good on the river in hand 1. he doesn't have the balls to raise JJ or KT. no one does.

in hand 2 I would call preflop since you have so many players already in

I bet hand 1 unless his preflop raise % is really (really) low

2nd hand, there just seems to be 1 too few people in the pot for me to call.

i like check-call in hand 1, because you will induce a lot of bluffs here.

i wouldn't fold this - you have 3 others in there with an easily-played hand post-flop - and implied odds through the roof to hit your set. you also have pretty good position.
