What, if anything, is the difference?

Preserves generally has chunks of fruit in it, sorta like chunky peanut butter.

Jam - also known as Preserves because the whole berry is in the finished product.

Jelly - mixture made from fruit juice, sugar and sometimes pectin.

also:

Jam > Jelly

Must be some sort of additive or something. Jelly is too...jelly-ly for my tastes, jam is much better.

Correct, although Jam is also "jam"-packed with sugar and pectin. I also prefer Jam, but there is an art to each. Also, preserves often refers to fruit that is not macerated (you'll find chunks that look like strawberries, instead of strawberry mash).
