North Carolina style pulled pork, with plenty of hickory chunks, and then Texas style beef Brisket over Mesquite. Both are fun all day affairs (6-10 hours), playing with coals, wood, heat and smoke.

Rub 'em the night before, make a mop, for every hour and whoop up a barbecue sauce.

Epicurious.com has great great examples of each, and use that as your basic idea...going nuts as you see fit. You are gonna love the thing and friends will be forced to bring over cases of cheap beer.
