the popcorn/choco-chip thread reminded me of a question: will risotto work as a dessert? risotto rules. rice pudding is pretty cool too. how about a risotto made with milk or creme instead of broth? can add cinnamon or chocolate for taste. Opinions?

If you want a rice desert, why not rice pudding?

I remember in Waldens bookstore seeing a book on rice that had a number of rice-based deserts. In Japan and I think India and Malaysia and places like that, rice deserts are not uncommon.

I don't have any recipes in front of me, but I would definitely give this a try. Intuition tells me to cook it in a mixture of half-milk/half-water, and then finish it with some cream or half-and-half after it's done cooking.

Absolutely will work. I've thought this very thing when eating a well-prepared rich risotto.
