How convenient that most twoplustwo geeks are also computer geeks.
Basically I am trying to make a desktop with the power to manage 8 poker tables and 3 browsing windows, without any slow down. Here is what I have in mind: 2.8ghz Pentium 4 (Hypertech), 1GB DDR, XP pro your basic stuff, maybe an extra fan.
What is a good video card to manage two monitors?

Get two sticks of 1GB, a new AMD Dual Core CPU, 6800 Ultras in SLI, and several 15k RPM SCSI hard drives.

What are 6800 Ultras in SLI? Do you really think I need several 15k RPM SCSI hard drives?

well you don't NEED any of these things. but you asked for the ultimate so I'm detailing what I think is the ultimate. if you get multiple 15k drives they are faster and you get some nice data back-up stuffs

Waste of money.

Get a Asus A8N-Sli board
AMD 3500+ or 3800+ processor
1-2GB Corsair Dual Channel XMS memory
Western digital 10k RPM 74GB raptor drive
Geforce 6600GT PCI-Express
That will serve your purposes well.

Is the Raptor drive reliable?
