I'm looking for a program to give me an EV analysis of all-in preflop scenerios. If I enter the blinds, the stack sizes (relative to blinds), the calling standards of my opponents (HU, 3 way or possibly 4 way), and my cards I want it to give me an EV estimate. I'm sure a program like this is possible, I just want to know if it exists.

P.S. A book with tables or a spreadsheet would not be as good but still help.

Eastbay made a program that fits your description exactly. There's a link to his site in his profile. edit: http://sitngo-analyzer.com

Just downloaded it. Can it calculate calling EV if I program in what possible hands opponet would push with?

What do you mean by "push". You mean they go all-in and you call? Yes. You mean you go all-in and they call? Yes.

I just noted that $EV changes when I change # of players. Is this somehow based on the payout structure of the tournament?

Yes. There is a conditional probability formula that involves all of the chip stacks as well as the payout structure of the tournament. See here for more info:
