I seem to recall an essay that was written by Mason or David in a 2+2 book about how to play in Jackpot games/hands. Does anyone recall what book that may be?

There is an Essay called "Jackpot games: Another Look" in Poker Essays I. There should also be a section about it in "Winning Concepts in Draw and Lowball".
