What do you look for in a bookie?

Do you guys, as Im guessing, mainly bet online, or do you have someone irl to bet with. What are the main qualities that you look for for an online/real bookie? What hours do you find most convenient to bet, for nfl/college, and which day do you guys like to settle up.

I only play online; all bookies are "real, BTW. Here are factors I consider important:

First, will I get paid?
Second, everything else is tied for second. [Reduced juice, quality software, customer service, bonuses, etc.]

If you go local, your book will tell you when you'll settle your number. Best hours to bet? I don't understand this question, but then again, I don't bet football.
