I did some googling and came up empty, but is there something that I could use with a La-Z-Boy type chair that would put 2 2001fp's in a usable position? Bonus points if you have a solution for mouse placement.

I think the ergotron can take care of your. . er. . .mounting problems. As far as mouse placement, there are utilities that let you just use keystrokes to control PP and other programs, so get a wireless keyboard and place it in your lap. Otherewise, an optical mouse can just be used on your leg, the arm of your recliner, whatever. .
