Cheddar is versatile, but a bit too dull to be a classic cheese IMHO.

Sharp Canadian Chedder from this little cheese company in the Rideau Lakes area of Ontario is one of my favorite things in this world. So I had to include.

Consider this Spam my friends..order some Sharp cheddar from here.. It really is amazing.

It's an Italian Cheese, very good, all different types, sometimes subtle, but sometimes sharp and smokey. It's a really good cheese. In fact, I have to change my answer again.

Today I bought some Melton Red. This is a combination of Red Leicester and stilton and is rather nice. It has the good old Red Leicester taste and then the Stilton kicks right in.

Stilton and apricots is pretty good too. Cheddar and Whisky is very common in Sweden, and is worth trying.

Good camembert is hard to beat.

I just read every reply in this thread and I can't believe no one mentioned Brie.

Next time you have some friends over for a BBQ buy a wheel of the good stuff.

Cut two steam slits on top of the wheel, then put it on some tin foil and put it on the grill. Start at high heat, but once its melted turn to low to keep the cheese gooey.

Have some good crackers handy, cut open the top of the wheel and dip at your pleasure.

That my friends, is the nuts.

(you can melt the wheel in your microwave if it isn't BBQ weather and keep warm on the stove or fondu type flame.)

I like Havarti, Gouda, Brie, and Jalepeno Havarti.
There's probably lots more but I can't remember the names.

I don't eat cheese, except mozzarella on pizza. It stems from when I was three years old and found an old, moldy piece of cheddar in my toybox. I ate it, of course (I mean, I was three), and have hated most cheese ever since.

I don't go to Ferdinand's to buy cheese. Rather, I have football season tickets and go to the Fieldhouse for beer before the games. Does this redeem me in your eyes?

- A really good triple cream brie
- Cambazola
- Irish Cheddar

- Fresh Chevre

I was getting scared that I was the only one.

I am a total nit when it comes to the ammount of cheese that is put on anything I order (I've even asked for "light cheese" on a pizza) .... although pile on the muenster when it comes to sandwiches (mostly bagel, but sometimes normal).
