What is the likelyhood of the button betting a busted flush or straight draw here? or of "value" betting a ten? or of calling all the way with a seven?

I don't what if anything I might have had written down in the notes at Party, but here are his stats: VPIP--47 PFR--15

I think this is a fine call. Very easy for him to have a busted straight draw.

For that matter he could also have a busted flush draw, which makes your call even better.
