I was having a discussion at a restaurant with a friend and were discussing the best way to cook steak. I like mine rare or medium-rare. He likes his well-done.

What do you like?

Medium-rare or Medium. I'm not a big fan of overly bloody, but i'd like to taste steak instead of burnt.

Has to be rare. If you ask for medium or anything more, why even bother? The longer you cook it, the less you can taste what comes out.

Depends on the cut. Anything ground, medium rare to medium. Filets, strips, and T-bones I like bloody as hell. The rarer (is that a word?), the better.

All you medium-rare people...I used to be one of you. Take the plunge...order it rare at a nice restaurant, and you'll never go back.

Medium-rare to rare. I don't mind seeing marks where the jockey was hitting it if it's cooked a little.

You should read the section in Kitchen Confidential about what ends up as the well done steaks in restaurants.

Also, your friend is clearly wrong.

Pittsburgh rare for porterhouses and up, mid rare for anything smaller. (Pittsburgh rare is burnt on the outside and rare in the middle, you need a thick steak to do it correctly...)

nobody is an idiot who likes steak well done. i dig mine medium to medium rare, so i'm not just a clown who is trying to defend my own view. i'm just saying, you pay for the steak, you get it any way you want. i have had steaks well done, and while i would never order it like that in a restaurant, it still has some flavor. if some people like it, who am i to tell them they're wrong?

by the way there is a big difference between something being inherently wrong and me thinking it's wrong. i think my original point at the time was that nothing can really be inherently wrong.

also let me just say this now, if anyone feels like arguing about this just PM me so we don't hijack this thread.

When my dad barbequed steaks on the grill, we would have to eat them the way he liked it, Medium Rare.

If we didn't like it that way, we would have to take it out to the grill ourselves and continue cooking it.

I have carried the same tradition down to my family. And I also agree that the better the cut of meat, the less you can cook it. I personally love a fat three finger filet with one finger of red in the middle.
