I shudder to say these words, but Hellmuth's Play Poker Like the Pros isn't a bad intro if you're interested in learning a little of all three 7-stud variants (High, Razz, Hi-Lo-8/b).

That said if you want to study one of them in depth you should probably check out one of the 2+2 books: The Sklansky/Malmuth/Zee stud book; the aforementioned Sklansky on Poker (seems way overpriced for half a Razz book though!); or Zee's High-Low Split poker, respectively. They're all a bit more advanced though.

Razz: Sklansky on Poker seems to be the standard.

Stud: 7 Card Stud by Roy West is good for low-limit games (which you'll likely be starting out in).
Seven Card Stud for Adv Players also has lots of good info, but geared towards higher limits (similar to HPFAP idea).
Super/System is a good read too, but overall the book might not be worth it.

Stud hi/lo - High-Lo-Split Poker is the best, also has stuff on Omaha 8/b
