opening offshore accounts

Even though I live in Canada and gambling is tax free and although its a grey area if the taxman can prove its your sole source of income I think then its taxable.With that and gambling taxed in the US I'm wondering if anybody has opened any offshore bank accounts to avoid hassles with these winnings?Maybe in the cayman islands or someone where your identity is untraceable.And if so can you do this without actually going to the place?Is there a bank you can sign up with online?I read a post about using epassport to cash winnings and them using offshore banks?Maybe there is some sort of other alternative that doesn't leave a paper trail.Any info and this subject would be appreciated.

If you have no incomes the tax man will start to wonder. And if you have enough incomes then you need not pay taxes. I am from Europe; I figure the case is about the same.
