I've heard the term used many times, but I'm still not quite sure what "variance" in poker means. Can anyone help me on that?

A measure of the up and down swings your bankroll goes through. Variance is not necessarily a measure of how well you play. However, the higher your variance, the wider swings you'll see in your bankroll.

That really tells me a lot about how it applies to poker.

Actually, the essay entitled "Computing Your Standard Deviation" on this site is outstanding if math intensive. Variance is technically the square of the standard deviation, although the first response you received explained the gist of it.
