i just got back from a fishing trip in the northern part of the state. it was a little chilly at times but we managed to catch 13 salmon. so i personally have a few pounds to myself and was curious if anyone had a recipe that i might be able to try.

i was going to use some and make some dip--which is pretty damn good. i might possibly bake/grill some not sure though.

Marinate the salmon (also very good with tuna steaks) in a pesto sauce (olive oil, basil, lemon, garlic) then over a charcoal grill with wood chips/chunks (I prefer hickory smoke flavor).

Find a local restaurant that has a smoker, and get those babies hickory smoked.

I like a little butter, lemon juice, and onion powder. Maybe a little garlic powder, salt & pepper. Stick it on a grill (George Foreman grill works great) and you're good to go. Another simple option for the grill is some BBQ sauce.

I should find the recipe, but I like a glaze I have a recipe for, that's made from soy sauce, brown sugar, garlic, and a couple of other ingredients. You can bake the marinated fish, or BBQ it wrapped in tin foil. Works great with some simple white rice and a veggie side.

Stuff it with onions, butter and salt.
Put it in tinfoil and cook it in the owen.

That sounds familiar...add a bit of bourbon, and it is nearly identical to a friend's recipe. It is fantastic.
