I made out like a bandit, but I still think I left money on the table... Bet the flop and check/raise the turn instead?

I say bet the flop. If you check, the most likely action has you trapping UTG for 2, which you don't want when you're drawing to the nuts. As it is, the bet come from CO, which is even worse.

Similar concept on the turn, but the conclusion is the reverse: with UTG+2 having been the final aggressor, the bet is likely to come from your left, making a c/r the most profitable play.

All in all, your excellent table selection more than made up for these factors.

I absolutely hate your flop checkraise. You're forcing the field to call 2 bets cold on a flop where you WANT callers.
