Folded to me in MP I raise with AA. Only the SB calls, I know nothing about him.

Flop comes 886 with 2 hearts. He bets, I raise, he 3-bets, I cap. Turn is a 7. He bets I call. The river is a Jack, He bets and I call.

82 wins.

This is not a bad beat story, I just feel that I'm constantly giving too much action when behind.

He played badly and got lucky. It happens. I don't see anything wrong with your play here.

P.S. Put him on your buddy list. You want him at your table.

Without a specific read on the player, you didn't give too much action. About the only overaggressive action you might have taken here was to cap the flop. That's a 1 SB error at most. If you knew the player was weak/passive and he bet into you on the turn after your flop cap, it would be a pretty strong indication you're beaten. However, in this situation, against an unknown, at least calling down seems appropriate.

I probably would have lost more. I might have called the flop 3-bet in order to raise again on the turn. No way you gave too much action here. Any less would be pretty weak.
