Should I have folded to the all-in?

Hand one: Why not just call preflop? You have position on him, try to take advantage of it in the flop.

Hand two: You can't fold to the allin, the pot is laying you 785 + 785 + 50 + 785 + 500 = 2905, and it's 500 to call so it's almost 6:1. Against the nuts right now (JJ):

Also you don't have odds against what he did have, an overpair:

So he would have to have JJ, KK, or AA for you to have (barely) wrong odds to call. However many times a more aggressive someone in this situation will have AK, AQ, AJ, TT, and will want to make it HU with the BB in order to have the best odds of winning the pot. So I call if I can put him on a range of hands wider than JJ-AA. I probably don't call in a higher buyin game, though.
